Start by browning your meat in a pan until there is still a little bit of pink.
1 pound ground beef
At this point, drain the fat.
Add the onions into the pan with the meat. Sauté the onions for a couple of minutes on medium heat and then add in your taco seasoning (However much seasoning your prefer - I did a couple of Tablespoons).

Give that a good mix and then add in your diced tomatoes.

Pour in your bone broth and let that simmer for about a minute or two.
2 cups chicken or Beef bone broth
Add in the 8oz of pasta noodles and stir to incorporate the liquid with the noodles.
8 oz uncooked pasta noodles
Cover with a lid and let it sit on medium heat for about 15 minutes or until the noodles have absorbed nearly all the liquid.
Make sure to check and stir the noodles every 4-5 minutes.
Once the noodles have soaked up most of the liquid, add in only 2 cups of your shredded cheese.
2.5 cups shredded Mexican Blend Cheese
Mix until creamy and cheese has melted. Once melted, remove from heat.
Now sprinkle on the remaining shredded cheese.
I throw on a handful of chopped arugula for added color and fiber (I promise you can't taste it).
