  • 5 yellow peaches organic
  • 1/3 cup coconut sugar
  • 2 tsp cinnamon
  • Vanilla Extract splash
  • Honey drizzle
  • 1/3 cup GF flour
  • 1/3 cup almond flour
  • 1/3 cup monk fruit sweetener
  • 1/4 cup vegan butter cold
  • 1/3 cup almond milk

Instructions

  • Preheat oven to 350
  • Cut peaches in half, remove the seed, and cut into thin peach slices.
    5 yellow peaches
  • Place peach slices into a pot and turn on low heat. add in your coconut sugar, 2 tsp of cinnamon, and a splash of vanilla extract.
1/3 cup coconut sugar, 2 tsp cinnamon, Vanilla Extract
  • Simmer on low heat until coconut sugar dissolves and you get a nice smooth mixture
  • Drizzle on about a tsp of honey and mix until well combined (*Optional: you can add 1-2 tsp of arrowroot starch to thicken the mixture).
    Honey
  • Pour your peach mixture into a small oven safe dish (mine was about 2.5x11.5).
  • Next, make the batter - start by cutting up your cold butter into small cubes and place into a bowl with your GF flour and almond flour.
1/3 cup GF flour, 1/4 cup vegan butter, 1/3 cup almond flour
  • Use your hands, or a fork, and press the butter into the flour and combine as best you can (until most of the butter has seemed to be incorporated with the flour).
  • Add in your monk fruit, almond milk, a splash of vanilla, and a dash of cinnamon. Stir until you get a nice and smooth batter (will be thicker than pancake batter, but not thicker than a cookie dough).
Vanilla Extract, 1/3 cup monk fruit sweetener, 1/3 cup almond milk
  • Begin to spoon small scoops of batter and evenly distribute on top of your peaches. Once this is complete, use a spatula or spoon and spread/smooth the batter into a nice top layer all along the pan.
  • Bake in the oven at 350 for about 30 minutes.
  • Let cool for about 10-15 minutes and now you are ready to enjoy! Serve with your favorite DF or regular Vanilla Ice Cream.
