Can I sub out the vegan products for regular?
Yes, if you are not dairy or gluten free concerned then you can absolutely use regular butter and regular milk. It will actually make for a more rich and buttery flavor (so good)! You can also use regular AP flour in place of the GF flour, but I would still use the Almond flour as suggested.
Can I switch the sugar?
Yes, if you prefer to regular sugar, that is fine – it will create a sweeter dish and be good flavor wise.
Canned vs Fresh Peaches
If you can find frozen sliced peaches, this will save you a lot of time and work out great. I have not tested with canned peaches but it is very common to use canned peaches and that is okay; if you are going to use canned peaches, I recommend about 2 cans and I would drain the juices. If you make with fresh peaches, you can leave the skin on if you’d like or peel them – it does not make a difference, it comes down to preference for that.

Gluten Free Peach Cobbler
Ingredients
- 5 yellow peaches organic
- 1/3 cup coconut sugar
- 2 tsp cinnamon
- Vanilla Extract splash
- Honey drizzle
- 1/3 cup GF flour
- 1/3 cup almond flour
- 1/3 cup monk fruit sweetener
- 1/4 cup vegan butter cold
- 1/3 cup almond milk
Instructions
- Preheat oven to 350
- Cut peaches in half, remove the seed, and cut into thin peach slices.5 yellow peaches
- Place peach slices into a pot and turn on low heat. add in your coconut sugar, 2 tsp of cinnamon, and a splash of vanilla extract.1/3 cup coconut sugar, 2 tsp cinnamon, Vanilla Extract
- Simmer on low heat until coconut sugar dissolves and you get a nice smooth mixture
- Drizzle on about a tsp of honey and mix until well combined (*Optional: you can add 1-2 tsp of arrowroot starch to thicken the mixture).Honey
- Pour your peach mixture into a small oven safe dish (mine was about 2.5×11.5).
- Next, make the batter – start by cutting up your cold butter into small cubes and place into a bowl with your GF flour and almond flour.1/3 cup GF flour, 1/4 cup vegan butter, 1/3 cup almond flour
- Use your hands, or a fork, and press the butter into the flour and combine as best you can (until most of the butter has seemed to be incorporated with the flour).
- Add in your monk fruit, almond milk, a splash of vanilla, and a dash of cinnamon. Stir until you get a nice and smooth batter (will be thicker than pancake batter, but not thicker than a cookie dough).Vanilla Extract, 1/3 cup monk fruit sweetener, 1/3 cup almond milk
- Begin to spoon small scoops of batter and evenly distribute on top of your peaches. Once this is complete, use a spatula or spoon and spread/smooth the batter into a nice top layer all along the pan.
- Bake in the oven at 350 for about 30 minutes.
- Let cool for about 10-15 minutes and now you are ready to enjoy! Serve with your favorite DF or regular Vanilla Ice Cream.
