Gluten Free Strawberry Chocolate Chip Cookies

Have you ever found yourself torn between chocolate-covered strawberries and a warm, freshly baked cookie? If you’re nodding along, then get ready for my Strawberry Chocolate Chip Cookies because they change the game. These bad boys bring the best of both worlds with the surprise of being gluten-free and refined sugar-free.

Gluten-Free and Refined Sugar-Free: A Wholesome Twist

But what sets our Strawberry Chocolate Chip Cookies apart is they are gluten-free and refined sugar-free, making them a treat you can enjoy without guilt. We understand the importance of catering to various dietary preferences and requirements, and this recipe embraces that ethos wholeheartedly. Honestly you will be surprised because they still taste sweet enough from the strawberries.

The Crunch of Freeze-Dried Strawberries

Why not just use regular strawberries?? The secret to these cookies’ unique texture and delightful crunch lies in the freeze-dried strawberries. We’ve carefully incorporated them to provide a burst of strawberry flavor and a surprising texture that adds a good element. Using regular strawberries gave the cookies a weird mushy texture and oddly enough, they did not taste as good. They also did not bake the same – using fresh strawberries created extra juices that altered the texture and bake of the recipe. Too much liquid can cause a flat and soggy cookie.

Quality Ingredients for Quality Taste

When it comes to the components of these cookies, or any recipe of mine, I always want to ensure highe quality ingredients. We’ve chosen Hu brand chocolate chips because they prioritize quality ingredients, bringing a rich, decadent chocolate flavor to every cookie.

For the buttery base of these treats, we turn to Vital Farms. Their butter adds a depth of flavor and a luxurious richness that ties the whole cookie together. Their cows are also pasture raised and grass fed so you are getting the best benefits.

Sweetness Factor: Coconut Sugar

Rather than granulated sugar, our recipe employs coconut sugar as a sweetener. It imparts a caramel-like sweetness, offering a unique taste that complements the strawberries and chocolate perfectly. This switch to a natural sweetener underscores our dedication to redefining how we approach sweetness in our recipes.

Simplicity in Preparation

Just as my whole blog focuses around ‘Simple’ – one of the best things about our Strawberry Chocolate Chip Cookies is how simple they are to make. With just a few key steps, you can have a batch of these cookies ready to enjoy. They’re perfect for spontaneous baking cravings or when you need a treat in a hurry.

Overall Experience and PCOS

These Cookies have an enticing blend of flavors, a nod to health-consciousness, and a commitment to quality ingredients. You can indulge in these treats without compromising your well-being. These cookies are also PCOS friendly as they do not include the refined sugar. This can be key with those who have insulin resistance. Using a more natural sweetener, like coconut sugar, can help to decrease the level of a glucose spike compared to using a lot of processed sugars.
