Copycat Chipotle Chicken Salad: A Tender Greens Moment Right at Home

My favorite restaurant salad brought to you straight my kitchen. Don’t get me wrong, Tender Greens does a fantastic job with their salad – it’s fresh, flavorful, and a healthier option compared to a lot of dining-out choices. But let’s face it, eating out frequently can be hard on the budget, and sometimes, you just want to enjoy a great meal without leaving the comfort of your home. That’s where my copycat recipe comes in!

The star of this homemade salad is the Primal Kitchen Brand Caesar dressing. This dressing is a game-changer, folks. Not only does it pack a punch of flavor, but it’s also made with high-quality, clean ingredients that you can feel good about. It’s like giving your salad a gourmet makeover without any of the guilt. It also, cuts so many calories off the dish compared to the in store version.

Why I didn’t list Ingredient Quantities

This recipe is very versatile and can be modified depending on how much you like of each ingredient. If you like Avocado, add extra Avocado. For me, I love radishes and will add extra; I also will add more chicken depending on how much protein I have eaten throughout my day. Customize it for you – as.long as the ingredients are there, you can add as much of each that you’d like and it will taste great! Also vary the quantity depending on if you want to make it for yourself or for the family.

Salad Tips

Marinading the chicken: I recommend marinading your chicken overnight to enhance the flavor. But if you do not want to or forgot, at least let it marinate in the fridge for a minimum of 30-60 minutes.

Greens Mix: You can use regular lettuce, but I chose a mixed greens options for more variety and fiber. I have made it with just lettuce and it is still great, that is how it is made at Tender Greens.

Tortilla Strips: I swapped the tortilla strips for the blue corn ones from Siete foods. They are grain free, use blue corn, and give that crunch the salad needs.

Meal Prep: you can prep this recipe for the week, but I recommend storing the ingredients in bulk in separate containers. That way nothing gets soggy and you can just throw everything into a bowl and you are ready to go.

Now, for my PCOS girlies – this salad is a great lunch or dinner option. It’s high in protein, gluten-free, and balanced with lots of fiber – all things that are great for managing PCOS symptoms. Copycat Tender Greens Chipotle Chicken Salad! I LOVE Tender Greens so I had to recreate this salad at home. Now that I nailed it…wow…I am not joking when I say this is my favorite salad and it’s the best one I’ve ever had. It's cheaper, full of flavor, and uses quality ingredients like pasture raised chicken and organic feta cheese.

Ingredients
  

  • Chicken Thighs Marinated in Adobo Sauce and garlic
  • Lettuce mixture
  • Avocado
  • Radishes
  • Feta Cheese Organic Valley brand

  • Blue corn tortilla Chips Siete Foods

Instructions
 

  • Marinate your chicken in Adobo Sauce, water, and garlic overnight.

  • Cook the chicken in the air-fryer at 400 for 13-15 minutes or cook on a stovetop until the internal temp reaches 165.
  • Place your lettuce in a bowl and top with sliced radishes, diced avocado, and a sprinkle of feta cheese.

  • Crush a handful of blue corn tortilla chips

  • Top with about 6oz of sliced chipotle chicken.
  • Plate with a serving of caesar dressing.

  • Place a lid or plate over the bowl and vigorously shake to evenly spread the dressing.
